Our FAVE Meatloaf, Mashed Potatoes, Carrots, 7 Layer Salad & PUFF WHEAT CAKE

Even though this menu is a mile long, it was easy and can all be made ahead of time! I made most it the day before.

Family Favourite Meatloaf

Prep Time: 15 minutes   Cook Time 1 hour   Makes 4-6 Servings
Meatloaf to me is so classic, and this recipe is my one and only recipe I have EVER used to make it.  It's so good, and we cannot get enough of it, so basically 'Don't fix, what aint' Broke!"  
My Mother In-Law gifted me the Best of Bridge Cookbook, and this page is WELL used!   I've made it so much during my marriage, I can now make it by memory, which is HUGE for this Recipe reliant wanna-be-cook.  Very rarely do I make something without a Recipe, so I always feel quite accomplished when I make something from memory.

Ingredients:

Meatloaf:

1 lbs. Lean Ground Beef

1 Medium Onion, finely chopped

1/2 cup Milk

1 Egg, beaten

8 Soda Crackers, crushed

Salt & Pepper to taste

Sauce:

1/4 cup Ketchup

1/4 cup Water

1 Teaspoon Dry Mustard

1/2 cup Brown Sugar

Instructions:

  1. Combine Ground Beef, Onion, Milk, Egg, Crackers, Salt & Pepper and Mix well.
  2. Place in a large loaf pan and make a groove down the centre of loaf.
  3. In a bowl combine Ketchup, Water, Dry Mustard and Brown Sugar.
  4. Pour over meat and Bake at 350' for 1 hour.
  5. When loaf is done baking, drain fat.

 7 Layer Salad

Also a classic, with a great taste and crunch!
Traditionally made in a Trifle dish, we convert into a casserole dish, much easier and more practical for the field.  True, you don't get to see the beautiful coloured layers, but really I don't think my farmers care!

Ingredients:

4 cups Iceburg Lettuce - Layer 1

1/2 bag Frozen Peas, thawed in water - Layer 2

1 cup Celery, chopped - Layer 3

1/4 cup Onion, chopped - Layer 4

1 cup Real Bacon Bits - Layer 5

6 Eggs, Hardboiled, Chopped - Layer 6

Dressing - Layer 7

1 Cup Cheddar Cheese, shredded - Layer 8

Dressing:

1 cup Mayonaise

1 Cup Sour Cream

3 Tablespoons Milk

Instructions:

  1. Spread chopped lettuce in the bottom of a 9 x 13 inch. Top with peas, onion, celery, bacon and eggs. 
  2. Spread Dressing over the top of vegetables. Spread cheddar cheese over the top.
  3. Cover and place in refrigerator 2 hours + or overnight.
