Harvest Meal #2 - Good 'Ol Lasagne & Ceasar Salad

In my opinion, there is nothing better for Harvest than a good ol' Lasagne. I make a couple and have them frozen on hand, for the days I don't feel like cooking!

This specific recipe is from one of my main go-to recipe books, 'The Best of the Best and More' from The Best of Bridge Series. I received this particular cookbook from my Mother-In-Law one of my first Christmas' with them as a family. I cannot tell you how many go-to recipes this particular book has given me. I love it and if you ever see it, I suggest adding it to your collection!

 

I've also switched up my Harvest Meals this year. Instead of 1 large meal-sized to feed everyone at once. I decided to now pack individual coolers. This way, if I am not needed to drive anybody anywhere after supper I can just leave everything or they can eat on the go. 

 

This individual option is also great because:

  1. I never know how many I'll be feeding, so 1 individual portion is a lot easier for myself to eat, instead of 3/4 of an entire casserole size 9 x 13!!
  2. I can drop and go because I honestly don't have time to sit and watch everybody eat, just to turn around and bring home empty containers and coolers... and
  3. Even though we don't have a huge crew of guys, they all have HUGE appetites. So I can portion control a little bit... In past years, for example, I was cooking a Costco sized family pack of chicken breast each meal for 4 guys... And that drove me insane! This way, no more eating until the food is gone, just because there's still food there!! Better on my stress level as well as our Harvest Meal BUDGET! 

 

Harvest Meal #2 - Good 'Ol Lasagne & Ceasar Salad

Traditional Lasagne

Prep Time : 1 1/2 hour Cook Time : 50 minutes
Makes: 1 9x13 or 3 x Loaf Pans

Ingredients:

  • 1 & 1/2 lbs. Lean Ground Beef
  • 1 cup Onions, Diced
  • 1 Garlic Clove, minced
  • 19 oz. can Italian Tomatoes
  • 14 z. can Tomato Sauce
  • 5.5 oz. can Tomato Paste
  • 1/2 cup Red Wine
  • 2 Tbs. Worcestershire Sauce
  • 1 tsp. Sugar
  • Salt & Pepper to Taste
  • 1 tsp. Basil
  • 1 tsp. Oregano
  • 8 Lasagne Noodles, cooked according to package directions (if planning on freezing, do not cook noodles)
  • 2 cups Ricotta or Cottage Cheese
  • 2 cups Mozzarella Cheese, grated
  • 1/2 cup Parmesan Cheese, grated

Instructions:

  1. In large Dutch Oven brown Beef, Onion and Garlic. Once browned drain off fat.
  2. Add Tomatoes, Tomato Sauce, Tomato Paste, Wine, Worcestershire Sauce, Sugar and Seasonings.
  3. Cover and simmer for 1 hour.
  4. Once meat sauce has simmered. In your pan layer the following :
    • 1/2 of the Meat Sauce
    • 1/2 of the Ricotta/Cottage Cheese
    • 1/2 Mozzarella Cheese
    • 1/2 of the Meat Sauce
    • 1/2 of the Ricotta/Cottage Cheese
    • 1/2 Mozzarella Cheese
    • Parmesan Cheese
  1. Bake at 350' for 40 minutes. Let sit 10 minutes before serving.

 

Caesar Salad

Ingredients:

  • 1 large head of Romaine Lettuce
  • 1 Garlic Clove, minced
  • 1/3 cup Oil
  • Salt & Pepper to Taste
  • 1/4 tsp. Dry Mustard
  • 1 1/2 tsp. Worcestershire Sauce
  • 3 (or more) Anchovy Filets, drained
  • 1 Egg
  • 1-2 Tbs. Fresh Lemon Juice
  • 2 Tbs. Parmesan Cheese, grated
  • Croutons

Instructions:

  1. Wash, Rince and Tear Romaine into bite-sized pieces.
  2. Belnderize remaining ingredients, not including the parmesan Cheese & Croutons.
  3. Toss Lettuce and Dressing
  4. Sprinkle on Parmesan Cheese and Croutons.
  5. Toss Again. Serve immediately.
