Easy Peasy : Shake N' Bake Chicken, Roasted Veggies & Pea Salad

So sometimes these posts are more for ideas on WHAT to make rather than how to make it!

Shake & Bake Chicken

All you need are Chicken Breasts, and the Shake N' Bake Package.  So Easy and so good every time.  I even mix it up sometimes, the BBQ chicken shake n' bake is one of our faves too.  I'm sure there is home-made shake recipe out there, but I know I, myself don't have time for that, so 'good job' to those who do!

Roasted Veggies

I grab a variety of root vegetables, ie: Potatoes, Carrots, Turnips, Zucchini, etc. and roughly chop them, then I drizzle with Olive Oil, Sprinkle with Seasoning Salt give it. quick mix and Oven Roast them at 400' for about 30-40 minutes.  

Easy Peasy and one of my favourites.  So may colours, and nutrients in 1 dish!

Pea Salad

Prep: 15 minutes     Serves: 6 sides

Salada Ingredients:

Pea Salad

Frozen Peas, Thawed in water

1/2 cup Real Bacon Bits

1/2 Red Onion, diced

3/4 Old Cheddar Cheese, diced or shredded

Dressing Ingredients:

1/3 cup Mayonaise

1/2 cup Sour Cream

2 Teaspoon Apple Cider Vinegar

Salt & Pepper to taste

Instructions:

  1. Combine all dressing ingredients in a large bowl and whisk to combine.
  2. Add peas, bacon, onion and cheese to the bowl and gently stir.
  3. Chill 2+ hours before serving.
